
My story
Bio-Engineer by training and following my commitment in the Horeca for 22 years, I wanted to give a new impetus to our Ardennes residence which is located in the center of the village of Redu. It is an old farm, which has been in the family for generations, which since 1984 had been transformed into a general bookstore. It has ceased its activities since October 2019. Books do not attract as many people as before.
Seeing continuity in this home and working in a familiar environment comforts me in the idea of reinventing myself, realizing a dream and changing my living environment.
The idea is to combine my training as a Bio-Engineer with my experience in the Horeca by including it in a new concept bringing together three activities: the manufacture of organic flour cold extracted by a stone mill, a trade in artisanal products. premises and a catering section, highlighting our flour and regional products.
The tourist activity is constantly developing in our region with the Village du Livre as well as the development of activities revolving around the space domain or its walks in the neighboring forests.
The name given to this company, the Moulin aux Dîmes, refers to this old building which was once the place where the parish tithe was collected. For the restaurant, the name “From grain to plate” gives it all its meaning.
